Tom Yum Chicken Wings

I bought a lot of Thai cooking paste during my birthday trip in June, finally have time to make some Thai cuisine :) This Tom Yum chicken wings recipe is easy and taste really yummy! Try it Thai food lover!


10-15 chicken wings
1 slice of galangal, grated -OR- 1 tsp of galangal powder
1-2 stalks fresh lemongrass, squashed and chopped
5 fresh lime leaves, roughly chopped
2 red garlic, peeled and chopped
3-5 red cluster peppers, depends on personal, chopped
2 tbsp Thai chili paste
1 tbsp fish sauce
2 limes, juiced
1-2 tsp sugar

How to
1. Mix together the chopped galangal, lemongrass, lime leaves, red garlic, red cluster peppers, Thai chili paste, fish sauce and 1 tbsp water as marinade sauce. Rub it all over the chicken wings, cover and set aside overnight.
2. Heat oil in a pan, quick fry the chicken wings both side, pour the marinade sauce and 2 tbsp water. Cover and simmer 7-10 mins in medium-low heat.
3. Add lime juice and sugar, stir-fry a bit. If the sauce is too watery, add some corn starch water to thicken it. Ready to serve.
