Tom Yum Soup

I always want to make tom yum soup home, finally I tried! It smells and tastes so yum! Cooking Thai food is really easy just you have to gather all the ingredients and you have good food to heal the weekdays stress.

Tom Yum Soup
70g Tom Yam chili paste (I am using Blue Elephant)
1 tbsp Thai chili paste
2 tbsp coconut milk
8-10 shrimps, shell and devein, keep the shell!!
800ml water
1 tomato, sliced into 1/4 rounds
50g oyster mushrooms
4 Thai eggplants, sliced into 1/4 rounds
4-6 okras, cut into 2
2 stalks fresh lemongrass, cut into 2-3 inches
1 slice of galangal
4 kaffir lime leaves, roughly chopped
1 limes, juiced
2-5 red cluster peppers, depends on personal, chopped

How to
1.Heat 1-2 tsp vegetable oil in a stockpot. Stir-fry the shrimps shell and heads a bit. Add water & Tom Yum chili paste until boil. Cover and boil in low heat for 5 minutes. Remove the shell and heads.
2. Add Thai chili paste, tomato, oyster mushrooms, eggplants, lemongrass, galangal, lime leaves and cluster peppers, cook in medium-low heat until boil. Then cover and boil in low heat for 10 minutes.
3. Add shrimps, okras and coconut milk, stir well. Cook in medium-low heat for few minutes.
4. Remove from heat, add lime juice and stir well. Ready to serve.
